Black-eyed Bean Casserole

BLACK-EYED BEAN CASSEROLE

This casserole can be made up to a day ahead, keep covered in the fridge.

BLACK-EYED BEAN CASSEROLE

Servings: 4 people

Ingredients

  • 425 gms Black-eyed Beans Canned
  • 425 gms Tomatoes - peeled Canned
  • 1 Medium Red Onion chopped
  • 1 glove garlic crushed
  • 125 ml Tomato Paste
  • 1 Green Pepper Chopped
  • 750 ml Water
  • 125 ml Fresh Parsley chopped
  • 65 ml Fresh Basil chopped
  • 500 gms Flesh Flat Mushrooms sliced
  • 310 gms Corn Kernel Canned

Instructions

  • In a large saucepan, heat the red onion and garlic with some olive oil until onion is soft.
  • Add Beans, undrained crushed tomatoes, tomato paste , pepper and water. Bring to the boil, reduce heat and cover. Let simmer for 1 hour, stirring occasionally - till the beans are tender.
  • Add Parsley, Basil Corn and Mushrooms, mix well and simmer for a further 15 minutes.

Notes

Serice with lightly streamed spinach and boiled pumpkin.

Mango Lassi

MANGO LASSI

This Indian drink is like a mango milkshake.

Ingredients

  • 255 ml Plain Yoghurt
  • 425 gm Canned Mango chilled
  • 400 ml Water Optional

Instructions

  • Put all ingredients into a blender and blend till mixed. More or less water depending on how thick you like it.
  • Pour into individual glasses and service

Tahini Balls

TAHINI BALLS

No cooking required.

Servings: 20 balls

Ingredients

  • 10 Figs dried
  • 12 Dates pitted
  • 250 ml Raisins
  • 125 ml Tahini
  • 250 ml Desiccated Coconut

Instructions

  • Put all fruit in a food processor and mix in the Tahini sauce
  • Shape into balls and roll in Coconut.
  • Put into fridge until ready to eat.

Notes

These are great to make in a hurry when unexpected guests arrive.

Kumera & Lentil Soup

This soup is a family favourite. So quick and easy to prepare and takes only 20 minutes to cook.

Ingredients

  • 5 ml Cold Pressed Olive Oil Extra Virgin
  • 1 small Red Onion chopped
  • 1 large Kumara chopped into small pieces
  • 250 ml Red Lentils
  • 250 ml Vegetable Stock
  • 750 ml Water
  • 5 ml Ginger powder ground
  • 5 ml Turmeric ground
  • 5 ml Coriander ground

Instructions

  • Add onions to Oil in large heated saucepan, stir until onion is soft. Add the three spices.
  • Add the water and kumara pieces.
  • Add red lentils and bring to the boil.
  • Cover and reduces heat and simmer for about 20 minutes (until Kumara is soft.
